Culinary Programs Help Students Develop Experience and Knowledge
Excellent programs, dedicated instructors, and a hands-on environment help make the Culinary Institute of Canada (CIC) one of the country's top culinary schools. The institute's three programs cover all aspects of food preparation, presentation, and service at international standards while helping students develop advanced culinary skills and providing managerial training.
The two-year culinary arts program and one-year pastry arts program provide students with the skills and knowledge necessary to build a career in the culinary field. Using both elementary and advanced methods, the programs teach beginning cooks the essential skills while helping experienced cooks expand their abilities and repertoire. Both programs are largely hands-on and production-based, which gives students a solid basis of experience upon graduation. Part of this experience in the culinary arts program is a mandatory paid internship between the first and second years that is related to students' fields of study.
The CIC was the first college in Canada to offer an applied degree in culinary operations, which is a two-year program designed to help students develop the highly specialized skills they need to move to high-level positions within a rapidly changing foodservice industry. As part of the program, students must complete an internship between their first and second years, and a directed foodservice study, which is a research opportunity supervised by both faculty and employers. To enter the applied degree program, students must have completed a culinary arts diploma at the CIC or another recognized institution and have a minimum of 1,280 service hours, or have at least five years experience in the culinary industry, one of which must be at the supervisory level.
Charlottetown's Myriad of Cultural and Recreational Activities Includes a Major Culinary Festival
On the south shore of Prince Edward Island, the province's capital city, Charlottetown, offers plenty of recreation, culture, and history for residents and tourists alike. Students at the CIC have a great opportunity to take advantage of all these benefits with the institute's prime location in downtown Charlottetown on the harbor.
Dining, shopping, and local entertainment can be found throughout the city and at Peake's Wharf along the historic Charlottetown waterfront, which is not far from the CIC. Students may also enjoy strolling on the boardwalk at Confederation Landing Park or relaxing in nearby Victoria Park. Additional Charlottetown activities include learning about Canadian history at Founder's Hall or enjoying the summertime Festival of Lights. Culinary students will be especially interested in Fall Flavours, a festival that features a myriad of culinary and cultural events, such as taste workshops, feasts, and direct to the source product experiences, all of which celebrate authentic Prince Edward Island tastes and traditions.
CIC students will also discover diverse recreational options beyond Charlottetown's borders. Prince Edward Island is home to a variety of cycling loops that allow bikers to enjoy the beautiful scenery; beaches where students can dig for clams, camp, or just relax; and numerous top golf courses. The Prince Edward Island National Park of Canada, located on the north shore, provides camping, fishing, boating, hiking, cross-country skiing, and skating activities. If students want to explore off-island locales, the Canadian provinces of Nova Scotia and New Brunswick are nearby; longer trips may include journeys to the cities of Montreal or Quebec in Canada and Portland or Boston in the United States.
Canada's Smartest Kitchen Provides Innovative Research, Development, and Promotion
The Culinary Institute of Canada offers more than food preparation training; it also contributes to food and bioscience businesses throughout the region with the innovative work that takes place in the institute's research department, known as Canada's Smartest Kitchen. Offering services that meet the individual needs of producers and distributors in various food industry sectors, Canada's Smartest Kitchen blends its culinary expertise, technological capabilities, and foodservice knowledge with a network of partners that includes businesses, research organizations, academic institutions, and government agencies.
Food processing is one of Canada's largest industries, and the partnership between Canada's Smartest Kitchen and a variety of other organizations helps to advance this growing field. Product development and refinement plays a key role in moving the industry forward. Canada's Smartest Kitchen provides services such as concept development, formula development, bench-top formulation, sample production, formula or product re-engineering, and nutritional efficacy research to aid in this effort.
Products must also be analyzed and evaluated, and these services, some of which are provided in partnership with the PEI Food Technology Centre, include sensory evaluation, tasting panels, focus groups, microbiological analysis, nutrition analysis and labeling, product shelf life assessments, and extraction and purification of bioactive compounds.
Another key component in the field is product promotion, and Canada's Smartest Kitchen provides services in that area as well, including market intelligence/data collection, nutritional consulting/ingredient functionality, packaging development, trade show coordination and promotion, corporate chef consulting, food styling/photography, and regulatory advisement.
